Sterilization and pasteurization autoclave

An autoclave sterilizes or pasteurizes pre-packaged products by subjecting them to heat treatment under pressure. This process, called canning, destroys microorganisms inside sealed containers: metal cans, glass jars, doypacks, and trays. By ensuring microbiological safety, it allows for long-term storage at room temperature, without the need for a cold chain, while preserving the product's quality.

Features

Operating principle

The packaged product is heated in a pressurized chamber. Heat transfer occurs through the flow of superheated water, steam, or an air-steam mixture. A counter-pressure of compressed air maintains the packaging and prevents deformation. The cycle is controlled by the sterilization value F0, which guarantees the treatment level, before a cooling phase.

Integration

The autoclave operates by loading containers into baskets after they have been filled and sealed. It ranges from laboratory pilot models to industrial models with automatic loading and unloading.

Sterilization uses a high-temperature treatment that destroys all microorganisms, allowing for storage at room temperature. Pasteurization, a gentler process, reduces microbial flora and extends shelf life, often requiring refrigeration.
It is the heat treatment of a product already sealed in its packaging that ensures its sterility and long-term preservation without preservatives or refrigeration.
Under the effect of heat, the internal pressure of the packaging increases. The counter-pressure of compressed air balances this pressure and prevents deformation of the trays, pouches and jars.
In a static autoclave, the baskets remain stationary. In a rotary or agitated autoclave, the movement accelerates and homogenizes heat transfer, which reduces processing time and preserves texture.
The F0 value expresses the sterilizing efficiency of a cycle, in equivalent minutes at 121 °C. It serves as a reference to guarantee and trace the level of treatment applied.
